| As the old Yiddish saying goes, Shvertz azayan Yid. It's hard to be Jewish. It's even harder to be a Jewish wine maker—hardest of all in Israel, where extra rules of halakha are applied. A Kosher certification on a bottle of Israeli wine, means that the grapes came from vines that were a least four years old and that the vineyards are left fallow once every seven years. It means that other fruits or vegetables were not grown between the vines and that one percent of the wine must be discarded as a symbol of tithe paid to the temple in Jerusalem. The craft of winemaking demands a special kind of devotion and commitment everywhere, nowhere more so than Israel. | Kosher Spirits |
