Light, delicate and often quite low in alcohol, KABINETT Rieslings are made from fully ripened grapes, but grapes still untouched by Edelfäule, botrytis cinerea mold, aka noble rot. They are typically semi-sweet with good acidity.
SPÄTLESE means late-harvested. The grapes used for this wine have been allowed to remain on the vine for an extra week or more. SPÄTLESE Rieslings are often fruitier and sweeter than KABINETT, but they can also be fermented to make a full-bodied dry (trocken) wine.
AUSLESE means selected. Specially selected clusters of over-ripe grapes, some affected by Edelfäule, are used to produce AUSLESE Riesling wines. These are typically fruity with residual sugar, but can encompass a wide range of wine styles.
